研究内容
1. 利用化学、分子与细胞生物学、动物模型以及人体临床实验等手段研究内源性自由基以及氧化应激对不饱和脂肪酸代谢的调节与影响以及其代谢产物在营养相关疾病(心血管和癌症)中的作用及机制;
2. 研究和开发基于现代质谱技术的代谢组学、脂组学和蛋白组学等手段研究脂肪酸代谢与人类营养相关疾病;
3. 利用质谱组学手段研究食品安全(食源性纳米材料和重金属等)相关通路及机理,食品安全评价与暴露组学。
