研究内容
1. 采用人源性细胞/靶动物等体内体外模型评价镰刀菌、链格孢菌等毒素及其隐蔽型污染的(混合)毒性,揭示其毒性作用与释放机制,为国家真菌毒素相关安全限量标准制(修)订提供基础数据。
2. 研究镰刀菌、链格孢菌等真菌毒素污染发生的调控机制及降解毒素关键基因功能,解析相关分子识别机制,形成基于酶制剂的真菌毒素污染控制技术规程。
3. 研究多组分真菌毒素同时定量与快速免疫检测新方法,研发标准物质与实用检测产品、技术标准等,开展食品中真菌毒素内外暴露风险评估研究,为政府部门、大型企业等食品安全监管提供技术支撑。
